One of the most difficult parts of any diet, including changing your lifestyle to focus on whole foods, is learning to live within the options you have available. You may have committed to eating less pasta, meat, and foods full of artificial ingredients but you do not have to be bored.
It may be time to try something completely new. One of the best places to do this is when making salads. A small change, like using an unusual vinegar or adding a different spice, can completely change the entire flavor of a salad and keep you enjoying natural foods.
When even changing your dressing is not helping anymore, try something new, maybe something ethnic. Many cultures have certain dishes that are famous. One famous salad is fattoush from Lebanon. There are several keys to this delicious salad: crispy vegetables, a dressing that uses lemon juice rather than vinegar, a spice called sumac, and crispy pieces of pita bread.
The vegetables are fairly straight forward. The crispy pita chips means you will want vegetables with as much crisp. That means very fresh lettuce, cucumbers, radishes, possibly carrots, onion, or bell peppers. Cut these vegetables into bite sized pieces that are large enough to still have a little crunch to them.
The dressing is a tangy mixture or fresh lemon juice and extra virgin olive oil. Depending on your taste you may want a 1 to 1 or 2 to 1 ratio of oil to juice. Salt, pepper, and mint are all usually added to this dressing along with a sumac, a spice that is very popular in Lebanese cuisine and can be found in international food stores or online.
Store bought pita chips are usually fried, high in salt, and full of artificial ingredients. Baked pita chips are easy to make. Just take your natural pita bread and tear it into pieces, dab a little olive oil on it and add a small pinch of salt and bake them until they are crispy.
To assemble this salad just toss the vegetables into the dressing and then leave a few pita chips around or on top. You can also add fresh parsley or even tabbouleh for extra flavor. This tangy and crispy salad is great for when you want to try something different. The best part is that other than sumac, everything is available most of the year in most of the country.
