Salads are a great meal to eat if you want to eat more healthily, and with so many variations you’ll never get bored! This delicious Garden Salad with Black Olives is a delicious meal in itself, or a gorgeous accompanying side dish.
¼ cup white wine vinegar
¾ cup extra-virgin olive oil
1 ½ teaspoons Dijon mustard
¼ cup sliced radishes
¼ cup chopped fresh parsley
½ head romaine or another type of salad leaf, torn into bite-size pieces
½ head iceberg lettuce, torn into bite-size pieces
½ finely sliced white onion
½ cup pitted black olives
2 cups sliced tomatoes
Salt and black pepper, to taste

- Put the vinegar, extra-virgin olive oil, parsley, mustard and parmesan in a glass jar and seal it tightly.
- Shake well to combine and season with salt and pepper to taste.
- Combine the romaine, lettuce, onion, olives and tomatoes in a big bowl and toss a few times.
- Season with salt and pepper and set to one side.
- Add the dressing to the salad and toss again.
