The Egg Guy’s ‘Easy Carbonara’

Serves: 2-4


Spaghetti or other pasta - enough for the number of people you are serving

3 eggs

2 egg yolks

½ cup freshly grated parmesan

½ tsp salt

3-4 rashers of rindless bacon

Freshly ground black pepper


- Cook pasta in plenty of hot salted water. While pasta cooks, combine eggs in a bowl and cookbacon in a deep pan. When pasta is cooked, drain and return to the pan with the cooked bacon init. Remove from the heat. Pour the egg mixture over the pasta and gently stir to combine. Finishwith a generous grind of black pepper. Leave to stand for 1 min. Serve with grated parmesan and asprinkle of parsley on top.

- Optional - add in herbs, garlic, peas, onion to create your favorite carbonara flavours.

      And to make it even better, skip the bacon and replace with fresh steamed NZ mussels. Yeah.

        Well you can't really get much easier than this! I do something similar but use only one egg and add half a cup of cream or sour cream to the mix.

        One thing to note if you are cooking this recipe. Don't put the pot back on the heat or you end up with pasta with lumpy scrambled eggs instead of a lovely creamy coating.

        I made this for dinner tonight, it really is as yummy as it sounds, the kids actually sat at the table and ate all thier dinner without moaning once! Will definitely cook it again, :-)

        This sounds really tasty while being reasonably simple - wish my chooks would lay more eggs though - I'd be hard pushed to have five at any one time!

        Perfect, I'm another who is going to give this a go tonight. We don't have parmesan, only mozzarella so I'm not going to get quite as flavoursome taste but it'll be lovely and stringy. Will equates to messy and fun for my daughter!!!

        Thank you for posting this recipe! I just made it today for tea and it was fabulous! It is an easy and fail-proof dish and very economical and quick to make. Great with a salad on the side for a hearty and nutritious meal and way cheaper than eating out. Perfect when you are looking for an easy meal after work or when you are at uni. Might add some prawns next time and see how that goes.

        And yes at T T, I too feel so hungry after looking at recipes! Cooking shows make me even more hungry!
