Chicken with Cashew Nuts

If you want to whip up a dinner that can be served to loads of people without any compromise on quality, this is it! This Chicken with Cashew Nuts is a gorgeous meal that you’ll all absolutely love.


10 gms Ginger

15 flakes Garlic 

1 ½ kgs. Chicken pieces 

10 Whole dry red chillies (kashmiri ) soaked in ½ cup hot water for 15 minutes, water drained and reserved 

1 tbsp Cumin seeds 

1/2 cup Cashew nuts 

1 1/2 cups Water 

1/2 cup Vegetable oil 

2 Onions sliced 

4 tbsp Salt 

3 tbsp Tomato ketchup 

1 tbsp. Sugar

- Grind together ginger and  garlic  into a paste and rub on chicken. Allow to marinate for about 1 hour.

- Grind together cumin and chillies seeds into a paste adding a little water in chillies were soaked, from time to time.

- Separately grind cashew nuts into a paste, adding a little water (1/2 cup) from time to time.

- Heat oil in cooker for about 3 minutes. Add onions and fry till golden brown. Add chilli paste. Stir and fry for about 3 minutes. Add chicken. Fry for about  10 minutes. Add salt and         remaining water (1 cup). Mix well.

- Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 5 minutes.

- Remove cooker form heat. Allow to cool naturally.

- Open cooker.

- Place cooker with chicken on high heat. Stir in cashew nut paste, tomato ketchup and sugar. Cooker till gravy thickens (approximately 2 minutes), stirring constantly . Serve hot.

    You can easily get bulk madras curry powder from this website as it has authentic spices. I have tried most of their spices and they are the best that I have tried abroad.
