Cheesecake Mocha


Cheesecake is one of my favourite desserts and is so easy to make, yet so very impressive for the dinner party guests. Cheesecake is a perfect kiwiana sweet treat and this recipe is divinely smooth.

Serves 6

Cheesecake Base:
1/2 cup flour
1/2 cup brown sugar
1/2 cup macadamia nuts
50 g butter
Place above ingredients in a food processor and process until combined.
Press into a 20cm springform tin
Bake at 180 degrees celcius for 15 minutes.

Cheesecake Filling:
1/2 cup ground espresso coffee beans
1 cup boiling water
500 grams cream cheese
4 eggs
1/2 cup brown sugar
2 tsp vanilla essence
Place coffee in plunger, add boiling water, plunge after 10 minutes.
Soften cream cheese and place in bowl of food processor.
Add eggs, brown sugar, strained coffee and vanilla.
Process until combined.
Pour over base.
Bake 160 degrees celcius for 1 hour or until cheescake is set.

Cheesecake Topping:
Cover cheese cake with whipped cream and garnish with toasted macadamia nuts
and chocolate covered coffee beans.

    Love coffee and love cheesecake but I wonder if the sourness of the cream cheese clashes a little with the coffee flavour.
