How to make Herbs duck

Herbs duck

Ingredients:

  • 1 duck, washed and dried
  • 1 teaspoon of salt
  • 1 tablespoon of thyme
  • 1 tablespoon of marjoram
  • 1 lemon, juice only
  • 4 apples, cut in halves, cores cut out
  • 2 stalks of rhubarb, cut into 3 cm sections
  • 1 carrot, peeled and sliced
  • 1 onion, cut in quarters
  • freshly ground pepper

Procedure:

      1. Sprinkle duck with lemon juice, salt, pepper, thyme and marjoram. Marinate in fridge for about 2-3 hours.

      2. Arrange duck in heat proof dish, stuff with apples and rhubarb, put carrot slices, onion and remaining apples and rhubarb around duck.

      3. Bake in preheated oven, 170-190 C degrees, about 1,5 to 2 hours (depending on size of the duck).

    I doubt that not many Chelsey readers will be making this dish with the cost of duck being as high as it is in NZ - think it was $36 at the supermarket last time I looked - for a bird that would feed maybe four people! They have so little meat on them in comparison to say, a chicken!

    I haven't had duck for a while. We usually stick to just the duck breast when cooking. Yum.

    Even the duck breasts were $19 each last time I looked!

    ive never done waitbait... i only just started doing salmon myself... and that the only fish ive ever done... lol something scares me about it@@

    It's so good. Like, the only fish worth trying if you were only going to try one sort. Yum!

    This would be ideal in 'Duck shooting Season'....... plenty of them then..... Beware to 'Duck the pellets/buckshot' though..
    Herbs duck sounds a great reciepe..
