Thyme Stuffed Trout Kebab

If you want to serve a lunchtime meal that will amaze everybody, give this Thyme Stuffed Trout Kebab a try. Your guests will never have tried anything like it, and as soon as you’ve tried one piece you’ll be hooked for life!


500g trout, skinned, deboned and cut into 2 x 2 square inch pieces

1 red onion, chopped

1 cup breadcrumbs

2 tbsp. lemon juice

2 tsp. fresh thyme, finely chopped

1 onion, coarsely chopped

1 red bell pepper, sliced

½ cup sunflower oil

1 cup white wine

1 cup orange juice

a spinach salad to serve

soft crusty rolls to serve

- Combine onion, oil, white wine and orange juice.

- Add trout pieces and marinate for 10 minutes.

- In another bowl, thoroughly mix together red onion, breadcrumbs, lemon juice and thyme.

- Season according to taste.
