Best Ever Bacon & Egg Pie

Serves: 4-6

Ingredients

8 Eggs

½ cup bacon, chopped

1 spring onion (optional), chopped

1 egg yolk beaten with a tablespoon of water

Salt and pepper to taste

400g block, sheets, or roll of puff pastry

Method

Bacon & Egg Pie is an easy to make, real kiwi classic. Great for lunches, brunches, dinner or a picnic.A 20.5 x 20.5cm cake pan, or a round 23cm metal pie dish is ideal.

Preheat oven to 200°C. Roll out two thirds of the pastry on a fl oury bench to line a shallow greased23cm pie tin. Scatter over spring onion and half of the bacon, break in the eggs and season, thenscatter on the remaining bacon.

Roll out the remaining pastry to make a lid. Crimp the pastry edges together with your fi ngers andtrim off any excess. Use the trimmings to decorate the pie if you wish (attach these with a dab ofegg wash). Cut four small vents in the pastry lid with a sharp knife. Brush with beaten egg mix andbake 35 - 40 minutes until rich golden brown and crispy. Serve warm - or cold.

    I love making bacon and egg pies, this recipe sounds so yum too. Such a great thing to make if your going out to someone's house and your not sure what to bring, you can eat it hot or cold. I made one the other week and cut it in medium size squares and put them in the kids lunch box. :-)

      THE greatest picnic food! Bacon and egg pie takes me back to my childhood - sitting under a pohutakawa on a rug at the beach and that yummy smell as the bacon and egg pie was unwrapped. It might not be a gourmet food but it can certainly hit the spot when you're hungry - especially outdoors!

      Much better for the lunch box than boring old sandwiches, and probably a lot better for you too. Great for picnics as well.

      Yummy, my family are very suspicious when I put anything but bacon and egg in a bacon & egg pie - but this sounds nice.
    • Mum used to make them all the time (more egg than bacon)and I got over them years ago but my husband loves them and it is always good to have the classic recipes to fall back on.

      Myself l like Bacon & Egg Pie with more whites than yoke & a good sized handful of peas thrown it. Something you can have at home or take a piece to work in your lunch. Don't forget the tomatoe sauce.

      Isn't it weird how different bacon and egg pie tastes from quiche when they both have basically the same ingredients? But then again, fried eggs and scrambled eggs taste totally different to me as well!
