Want the perfect Italian pasta? Look no further than this delectable Nicoise Pasta with sensational spanish onion, rocking ricotta cheese, beautiful beans and O-for-awesome olives. Perfect!
Serves 4 – 6
To make Nicoise Pasta, you will need:
400g penne pasta, cooked & drained (8-10 mins, salted boiling water)
200g whole green beans, cooked & drained
1 red onion sliced
50g marinated green olives, halved
1 Tbsp capers
425g can tuna in oil, drained
Wedges of lemon to serve
Nicoise Pasta, how to:
1. Toss cooked, warm pasta and beans together with the red onion, olives, capers, ricotta and tuna.
2. Serve hot with a wedge of lemon and a little shave parmesan if desired.
This dish is also delicious served cold as a salad. Add a dash of mayo for extra creaminess wow factor.
