French Toast

The Egg Guy’s Eggy Bread

Ingredients

4 Eggs

1-2 tablespoons margarine

4 Tbsp Milk

6-8 slices toast bread

Pinch of cinnamon

Optional: Fresh Fruit to serve eg Blueberries

Method

Mix 4 eggs and 4 tablespoons milk in a bowl with a pinch of cinnamon. Mix well. Cut 6 to 8 thicktoast slices of bread - these can then be cut into halves or triangles if you wish. Heat a littlemargarine in a non-stick frypan over a medium heat. Dip bread one piece at a time into the egg andmilk mixture. Coat both sides well.

Put coated bread into fry pan and cook for 2 to 3 minutes on each side - or until golden. You shouldbe able to cook 2 - 4 pieces at a time depending on the size of your pan.

Repeat with remaining slices of bread (add a little more of the margarine if needed betweenbatches). Serve warm with fresh or tinned fruit and a spoon of yoghurt, or with sliced banana andrunny honey. For a special treat, serve with sliced banana and lean bacon.

    I love French toast when you mix the eggs with the milk adding a little sugar and salt at the same time. That sweet/salty taste is what makes it for me. I also always use butter to cook rather than margerine so the toast goes beautifully golden but stays lushiously moist.. The ultimate toppings has to be a drizzle of thick maple syrup !

    I usually make jo seagar's french toast recipe but this is way easier and healthier - her's has a bit of sugar in it too. Might get motivated and make it now!

    ...I love french toast though my indulgence these days is rare...but still.....a big piece of day old bread from a raisin or date loaf soaked in egg cooked to perfection golden brown with a fusion of vanilla cream and maple syrup or golden syrup....yum!
  • mmm never thought of putting a Pinch of cinnamon in... great idea.. the kids will love this ... old and young of course!!!
