Very Berry Chocolate Cake

I got a new Goldair Stand Mixer this week (hot-rod red!) and wanted to test it out. What better way than to bake a cake? Using the below recipe, I put the mixer through it's paces. It's 4.2L mixing bowl made making a large cake like the one below (which has about 16 serves) a breeze.

The mixer also has this very handy plastic shield that goes over the bowl, so even though I didn't wear an apron, I didn't get any cake batter on me at all. With ten settings, it was perfect for mixing up a range of things - cake batter, berries, cream... and it looks so stylish in my kitchen. And as for the cake? I thought it tasted delicious, but give it a go yourself using the below recipe!


 

Ingredients: 

 250g chocolate buttons

 250g softened butter

 4 eggs

 1 cup castor sugar

 Four cups of sifted self-raising flour

 1 litre cream

 1 400g tin of mixed berries in syrup

 Icing sugar

 Hot water  



 Cake Method: 

 Preheat oven to 180 degrees on bake. 

 Melt half of the chocolate buttons in bowl in microwave or on double boiler on stove. Add butter, eggs, sugar and flour. Mix until smooth. 

 Grease tin or lay with baking paper. Pour mixture into tin. 

 Bake for 80 minutes, checking with a skewer to ensure it is cooked through.  


 Icing Method: 

 When cake is cool, cut horizontally through middle. 

 Whip cream, mix in half the tin of berries, adding a little syrup. 

 Add cream to one half of the cake, then place the other half of the cake gently on top. 

 Melt the other half of the chocolate buttons in bowl in microwave or on double boiler on stove. 

 Take melted chocolate and mix with warm cream, whip until desired consistency is reached. Add icing sugar if you want it thicker. 

Pour chocolate icing over cake, spreading evenly. 

Once the icing is dry, serve the cake with the rest of the berries.
