Green Kiwi Ice Cream

Ice cream will forever be the dessert of choice for children and adults! There’s nothing better after a hot meal or on a warm summer’s day, and this delicious Green Kiwi Ice Cream is an exotic variety of a delicious dessert.

 

Ingredients

6 ripe kiwifruit

2 tbsp sugar

2 large eggs

1 cup sugar

2 cups heavy or whipping cream

Procedure

- Peel the kiwifruit and mash them in a bowl until pureed. Stir 2 tbsps sugar into the fruit cover and refrigerate for 1 hour.

- Whisk the eggs in a mixing bowl until light and fluffy for 1 to 2 minutes. 

- Add in the 1 cup sugar , little at a time, then continue whisking until completely blended for about 1 minute more.

- Pour in the cream and whisk to blend. Stir in the kiwifruit.

- Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.

    This sounds very good, I have an old manual ice-cream maker but it's just too much work to use. I wonder if this would work ok if you freeze it , beat it in a blender for a bit and then re-freeze. Does anyone do this with other ice-cream recipes?

    Note: For anyone that my be pregnant, the medical consensus seems to be to avoid any food that contains raw eggs while expecting, as these may contain salmonella bacteria. However, I have just read that only one in every 30,000 eggs is contaminated with salmonella, so this is a pretty uncommon problem (http://articles.mercola.com/sites/articles/archive/2002/11/13/eggs-part-two.aspx). If you have any concerns, have a look around the web for more information or ask your doctor.

    I wish i had a ice cream maker some times... haha although my tummy is prob thankful that i dont!!

    Another note: I have made a number of kiwifruit desserts and they all tended to look slightly brown - partly the slightly khaki colour of the ripe fruit and partly the effect of the little black seeds.

    If you want to have your ice-cream looking fresh green like the picture, it might pay to add one or two drops of green food colouring. Take it slowly though as it gets artificially bright very quickly.

    WOW this recipe is outstanding, i have always wanted to make my own homemade ice cream, a big fan of kiwi fruit, as it is very good for you, this is something i am going to make when my cousin visits me from scotland next month,perfect to give her something very kiwi,excuse the pun

    green for kiwifruit-flavoured? great idea! my first reaction would have been "mint", "honeydew" or "pistachio". Guess i'll have less guilt eating this because after all, kiwifruit is going to make the whole dessert healthy and taste "less sweet" (unless you fall into the trap and add extra sugars in the hope of bringing down the acidic taste)

    This sounds lovely, I love making ice cream and I love kiwi fruit. Best of both worlds
