Summer eggs

These gorgeous eggs will make an absolutely wonderful brunch whatever the weather. The Summer Eggs are packed full of goodness, and will soon become a firm favourite with all you egg lovers!



1 tbsp olive oil

400g courgettes, chopped into chunks

200g cherry tomatoes

1 garlic clove, crushed

2 eggs

A few basil leaves, to serve

- Heat the oil in a non-stick frying pan and add the courgettes.

- Fry for 5 minutes then add the tomatoes and garlic, and cook for a few minutes more.

- Make two gaps in the mix and crack in the eggs

- Cover the pan and cook for 2-3 minutes until the eggs are done to your liking

- Scatter over a few basil leaves and serve with crusty bread
