Baked Eggs with Ham and Tomato

If you’re a fan of eggs and you want a new, interesting recipe to use them in, then look no further than these Baked Eggs with Ham and Tomato. They are the perfect meal for brunch and is the perfect meal to serve to guests. 



1 garlic clove

1 tbsp olive oil

400g crushed tomatoes

4 slices cooked ham

2 eggs

- Heat the oven to 180C/fan 160C/gas 4.

- Heat the oil in a pan and sizzle the garlic for a few seconds

- Add the tomatoes and simmer for 10 minutes until thickened

- Stir in the basil.

- Divide the sauce and ham between 2 individual baking dishes.

- Crack an egg on top and season.

- Bake for 12-14 minutes until just set.

- Serve with crusty bread.
