Swiss (Bircher) Muesli Recipe

Alison’s Pantry has extended its nut and dried fruit range with seven delicious new varieties, providing even more healthy and nutritious snacking options for New Zealanders.Chelsey has searched for the most delicious of Alison's recipes, just for you! Today's I Love Nut's recipe: Swiss (Bircher) Muesli.  Fresh tasting and satisfying, it disappears fast at any time of day.


Ingredients

For 2 small or 1 large serving:

2-3 Tbsp Alison’s Pantry Whole Dessert Almonds, chopped 

¼ cup Alison’s Pantry Sultanas, chopped 

¼ cup Alison’s Pantry Instant Oats 

½ cup (150g pottle) low- fat fruit-flavoured yoghurt 

½ red skinned apple

Procedure

- Finely chop the almonds (by hand or machine). Chop sultanas and add to almonds. Stir in rolled oats and yoghurt. Quarter the apple, removing the core, then grate or finely chop and mix   the apple through everything else.

- Refrigerate up to 24 hours. Eat for breakfast or pack in tight-lidded containers for healthy and delicious lunches.

    My favourite when ever work gets me to stay in a hotel - can make it myself now!! Yum

    Yum. I love having bircher muesli whenever I have hotel breakfasts too. That's not to say they are all wonderful!

    This recipe does sound nice and simple. I think I might leave the skin on the apple though - the exra bit of roughage couldn't hurt!

    I also might add a chopped brazil nut as I have been reading about the lack of selenium in NZ diets and brazil nuts are one of the best sources of this mineral.
