Croissants are a wonderful breakfast any morning, and for a way to liven up any croissant then this Brie and Spinach Croissant recipe is the perfect way to do it. It’s filling, indulgent and very tasty, and is the perfect thing to impress any guests with.
100g young leaf spinach
6 thick slices of brie
½ garlic clove, crushed

- Cook the spinach in a little butter with the garlic until wilted
- Squeeze out excess liquid
- Lightly toast the croissants on the cut side then pile on the spinach and brie
- Grill again until oozing, then fold together.
